Peel the ginger root and cut into slices or circles. Place in a saucepan, fill with water to completely cover and cook for 30 minutes. Drain the water.
For syrup, mix water with sugar and cook until sugar is completely dissolved on low heat.
Transfer ginger to a pan with syrup and cook until all the liquid has evaporated, stirring constantly, then refrigerate.
Roll the ginger in the syrup in sugar and put on a baking sheet covered with parchment, dry in the oven at a minimum temperature to the state you need.
