Preheat the oven to 180 degrees. Oil the frypot a little.
In a bowl, mix olive oil and garlic. In a separate bowl, combine breadcrumbs, parmesan, basil and pepper. Cut the meat into large but not thick pieces, dip each slice of the breast in the oil mixture, then in the breadcrumbs. Arrange the meat in a roasting pan and sprinkle with the remaining breadcrumbs.
Bake for 30 minutes in a preheated oven.
