Peel and grate the carrots on a coarse grater.
Cut the onions into half rings and fry in olive oil until soft.
Then add carrots to the onion and cook for about 5-8 minutes.
Peel the squid and cut into rings. Add to the pan to the vegetables, salt and pepper to taste. Simmer for about 5 minutes.
Ready squids can be served warm or cold.
