Clean the fish and remove the gills. Use a knife and scissors to remove the ridge, the fish should look like a boat.
Finely chop the onion and mushrooms and fry in oil until golden brown.
Add boiled rice to vegetables, salt and pepper to taste. Stuff the fish with the cooked filling, spread the remaining rice around the gilthead.
Lubricate the gilthead with sour cream. Bake at 180 C for about 1 hour.
Serve with lemon juice and garnish with herbs. Enjoy your meal!!!
